Custard Sauce
Sauce anglaise

What is a custard sauce?
A classic dessert sauce made with egg yolks, sugar and milk. Vanilla is often added to give more flavor.

Ingredients

4 egg yolks
2 cups milk
1/3 cup granulated sugar

Optional: 1/2 or 1 tb vanilla extract
 

Custard Sauce Recipe serve 6

Step 1: Boil milk - and optionally vanilla.

Step 2: Beat egg yolks and sugar until mixture is pale yellow

Step 3: While beating, slowly pour the boiling milk in the mixture.

Step 4: In a saucepan, cook over moderate heat, stir all the time, until cream coats the back of the spoon, during 5 to 10 minutes. Do not let the sauce boil.

Serving: with floating island.
